Baked Potato and Chicken Casserole


Ingredients
2 lbs chicken, cubes
3 large potatoes, cubed
1/3 cup olive oil
1 1/2 tsp salt
1 tsp pepper
2 Tbsp garlic powder
1 c shredded cheese
1/4 c green onions, diced

Preheat oven to 500 degrees
In a large bowl, mix olive oil, salt, pepper and garlic powder
Add potatoes and stir, allow for extra sauce in bowl
Put potatoes in a casserole dish and bake for 45 minutes, stirring every 15
Add chicken to extra sauce and mix. 
Once potatoes are done, add chicken to dish and sprinkle with cheese and green onions.
Bake another 15 minutes, or until chicken is done and cheese is melted.

That's all there is to it!

Strawberry Banana Smoothie

I'm obsessed with these smoothies!  And the best part is, they're a healthy breakfast option!  If you have time to prepare ahead, I suggest chopping the strawberries and bananas and freezing them in ziplock bags to have ready for the week!  Much easier than all that chopping while you're trying to get out the door in the morning!

Baked Chicken and Veggies

I love this recipe!!! It is for sure going to be a regular at our house. It is so easy, and YUMMY!

Baked Chicken and Veggies






2 lbs of chicken
5 medium size red potatoes
Carrots and Broccoli
4 Tbsp Butter, melted
1 packet of Italian Dressing Mix

Place chicken in the middle of a 9x13 baking dish.
Cube potatoes and place on one side.
Place broccoli and carrots on the other side-use larger pieces of broccoli, or it will shrivel!
Pour melted butter over everything.
Sprinkle with Italian dressing mix.
Bake at 350 for 1 hour.

That's it!! So good and so easy!

Remember last week when it decided it was spring? And now we're back to rainy days?! (which I guess is fine, I do love the rain!!) When it was a little warmer, I threw together this outfit!  This shirt is so fun and simple!  I love the cheetah print back (obviously!)  And these shoes are so adorable (even though they're a little uncomfortable! So worth it.)

Hi there!
Lately, my husband Gavin and I have been trying to eat better, and work out more.  Which is something we've tried multiple time, but haven't found anything that will stick!  We are trying again, and hoping to make a permanent change to our eating/workout habits.  Gavin found this awesome website called nodietsallowed.com!  It's really great, and inspiring!  The blogger talks about making healthy eating a lifestyle change instead of dieting.  Which, let's face it, dieting SUCKS and we all hate it.  No one likes to be hungry, or cut out EVERY yummy, unhealthy food.  Nodietsallowed.com talks about eating 90 percent healthy, and 10 percent of what you want!  Which I think is a great plan!  Do I need to drink a soda (or 3?) every day? No.  Do I NEED to have candy and treats all the time? No. BUT I do think it's okay to have once in a while, that will prevent the total cave where I eat my weight in Cadbury Eggs. (Ya feel me??)

So I've been scouring Pinterest for lots of healthy recipes and work out ideas!  I am going to do better about meal planning for the week, and I think blogging about it will really help me stick with it, because I will have someone (sort of) to answer to!  I found a ten week meal/workout plan on Pinterest, and have tweaked it to fit what I want it to be!


The Plan
Meals: Breakfast, snack, lunch, snack, dinner--I've read that it's good to eat lots of small meals to keep from starving and over doing it when you eat meals!
Drinks: Way more water! And less soda, my goal is 2 sodas a week. (quitting cold turkey never works out for me!)

Workouts Options: Choose one Monday-Saturday, rest Sunday
Circuit: 150 jumping jacks
            50 crunches
            20 tricep dips
            15 squats
            15 lunges (each leg)
            70 russian twists
            20 calf raises
            10 pushups
            30 second plank
            10 lunge split jumps
30 minutes of Cardio: running, eliptical, zumba, etc.
1 hour of yoga or pilates


The Goal
Over the next ten weeks, I really want to make a commitment to changing how I eat and working out more.  I hope to find a TON of delicious, healthy recipes, that I can use to change how we eat!  I hope to really commit and stick with this plan and make it a lifestyle change and not just a temporary diet that will eventually end!  But the main thing I hope to get out of this experience is to feel better about myself, and gain higher self confidence!  Once a week, I am going to blog about what works for me and what doesn't, and share some of the yummy recipes I find!  I think blogging about it will really help me to see my progress and stay on track!  And I hope anyone who follows along will find some inspiration, too!

Mindy Mae's Market hit the nail on the head with these shoes and this gorgeous necklace!  I've had these jeans for a couple years, but I haven't worn them for a while because I didn't love how they fit. But then I did this "Skinify" Your Jeans How To, and now they are one of my favorite pairs of pants!  I'm loving colored jeans right now, and enjoying this spring weather!

"Skinify" Your Jeans-How To

Hi there!

Today's post is a how to!  We all have that pair of pants that fit perfect, and we wish all our jeans fit like those ones!  With this how to, you can have that!!  This is a super simple sewing project! Here's how to "Skinify" your jeans!  This works great for straight leg pants, or flared pants.

Before! Please ignore the purple hoodie with the red jeans! Haha!

Turn your jeans inside out, and fold your jeans in half and lay them out.  Line them up using the inseam and the waistband. Trace the outline and sew them! Once you sew the first leg, try them on to make sure you like the fit.  Do the same with the other leg, and you're done!  It's that simple!


After!

I'm really happy with how my jeans turned out!  I plan on "skinifying" many more jeans!
