Snickerdoodle Truffles

I found this recipe on Pinterest, and I had to give it a try!  I am sooooooo glad I did because these Snickerdoodle Truffles are amazeballs.  I will give you fair warning though, if you make them, make them for a crowd, or you WILL eat all of them by yourself!!!!

8 oz white chocolate chips
1 tbsp powdered sugar
1 tbsp cinnamon

1/2 cup unsalted butter
1 cup brown sugar
1 1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/3 cup all purpose flour
4 tbsp milk

In a mixing bowl, cream together the butter and sugar.  Add cinnamon and salt and mix.  Add in flour and mix well.  Add milk.  If dough is too stiff, add another tablespoon of milk (I did!)
Roll dough into balls and set on a cookie sheet.  Freeze for 30 minutes.

Mix together the cinnamon and sugar in a small bowl and set aside.
Melt the chocolate chips according to directions on package.  Dip each truffle into the chocolate. I just stuck mine in the white chocolate and used a fork to swirl it around and coat it! Lift the dough out of the chocolate and place on wax paper lined cookie sheet.  While chocolate is still melty, sprinkle with brown sugar and cinnamon.  Allow chocolate to set up before eating.  Store them in the fridge (if you can make it that long without eating every. single. one.)
