What is a Liebster Award, you ask? (Don't worry, I asked the same thing!)  The Liebster Award is a "for fun" award that other bloggers give to you!  How adorable and nice is that?!  I was so surprised and excited to be nominated by my cyber-friend, Meghan at Lipstick Skulls.  I have been following her blog for a few months, and I love it!  *Thanks so much for the nomination, Meghan!!*  If you are nominated for a Liebster Award, that means you won it!  It's just a nice way to say I LOVE YOUR BLOG and I think you're fabulous :)

11 Questions from Meghan!
1) How did you name your blog?
The name of my blog came along kind of randomly actually!  One day me and my bestie Hilary decided we wanted to have blogs and we were just brain storming.  I knew I wanted something with ginger in it, of course ;)  So I was just throwing stuff out, and when I said ginger next door, we both loved it!

2) What is your worst habit? Be honest.
It's gross.  When I have a zit, I CANNOT leave it alone.  No matter how much I know I will make it worse by touching it, I touch it.

3) What is your guilty pleasure?
Ridiculous tv shows. This is a guilty pleasure that luckily I share with my mama, we have watched all the episodes of Pretty Little Liars and Revenge. And even though both shows can be so frustrating and ridiculous, every season, we stay hooked!

4) Are a lot of friends or just a few besties more important?
Just a few close besties is perfect for me!

5) If you won the lottery tonight, what would be the first three things you'd spend it on?
Buy a house, buy a car, go on a fancy classy vacation!

6) What food could you eat your weight in if you never gained a pound?
It's not a food, it's a drink: DIET COKE!

7) Lake or beach?

8) City life or country life?
 City life!

9) Are there any battles you've had to overcome?
I have to almost daily overcome a battle I think a lot of people deal with! And that is talking mean about myself. I really try to over come talking down to myself/bad about myself!

10) Any hobbies?
Any kind of crafting, sewing, blogging, eating is a hobby right?  And of course dancing, I will always be a dancer at heart!

11) Would you rather have the most beautiful hair and the worst looking face or the most beautiful face and the worst looking hair?
That is a tough one! Haha!  It's embarrassing how many times I've changed my mind trying to answer this question! I'd rather have a beautiful face and terrible hair, the hot mess thing is really in right now. Plus you could hide it under a hat. hahaha

1. I LOVE cats. Love them. So much.
2. Harry Potter is my favorite book/movie/obsession. I could talk for hours with other Potterheads about how great it is.

Easter Weekend

Easter is such a great holiday to spend time with family, and remember our Savior, and all He has done for us!  I'm so glad I was able to have such a fun Easter with my family!  I am feeling so thankful and blessed for all the great things and people in my life!

Every year, Hilary and I dye eggs, we call it Eggstravaganza!!  This has become a permanent tradition, even now that we are married!  This year was our 5th Eggstravaganza!  And it was Dallin and Gavin's 2nd Eggstravaganza! (Oh they put up with our silliness so well!)

I hope everyone had a wonderful Easter weekend.  I am so blessed to have such a wonderful family, an amazing husband, and wonderful friends to make memories with!

Snickerdoodle Truffles

I found this recipe on Pinterest, and I had to give it a try!  I am sooooooo glad I did because these Snickerdoodle Truffles are amazeballs.  I will give you fair warning though, if you make them, make them for a crowd, or you WILL eat all of them by yourself!!!!

8 oz white chocolate chips
1 tbsp powdered sugar
1 tbsp cinnamon

1/2 cup unsalted butter
1 cup brown sugar
1 1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/3 cup all purpose flour
4 tbsp milk

In a mixing bowl, cream together the butter and sugar.  Add cinnamon and salt and mix.  Add in flour and mix well.  Add milk.  If dough is too stiff, add another tablespoon of milk (I did!)
Roll dough into balls and set on a cookie sheet.  Freeze for 30 minutes.

Mix together the cinnamon and sugar in a small bowl and set aside.
Melt the chocolate chips according to directions on package.  Dip each truffle into the chocolate. I just stuck mine in the white chocolate and used a fork to swirl it around and coat it! Lift the dough out of the chocolate and place on wax paper lined cookie sheet.  While chocolate is still melty, sprinkle with brown sugar and cinnamon.  Allow chocolate to set up before eating.  Store them in the fridge (if you can make it that long without eating every. single. one.)

Buffalo Chicken Lettuce Wraps

I've never had lettuce wraps before, but this recipe looked DELICIOUS! It was really easy to make, too!  I love anything that I can throw in the crock pot before work and not have to prepare dinner when I get home!

For the chicken:

2.5 lbs chicken (frozen or thawed)
1 celery stalk
1/2 onion, diced
1 clove garlic
16 oz chicken broth
1/2 cup hot sauce

For the wraps:
Large lettuce leaves
Shredded carrots
Celery stocks cut into 2 inch match sticks

Put chicken, onions, celery stalk, garlic and broth in the crock pot.  Add water if needed, so that the chicken is covered.  Cover and cook on high for 4 hours.
Remove the chicken from the crock pot, reserve 1/2 cup of broth and discard the rest.  Shred the chicken and return to the crock pot with 1/2 cup broth and hot sauce.  Cook on high for an additional 30 minutes.

To prepare the lettuce wraps, I stacked a few pieces of lettuce on top of each other to make the wrap thicker.  Put chicken in the middle, add carrots and celery sticks, and top with a dressing of your choice!  Wrap it up and dig in!

It makes quite a bit of chicken. We used the leftover for lunches, and chicken quesadillas!

Cheesy Chicken Enchiladas

I absolutely love chicken enchiladas, and this recipe is amazing!!

1 can Progresso Chicken and Cheese Enchilada soup (fyi I couldn't find this at Target! Smith's has it!)
1 10 oz can mild green enchilada sauce
2 cups shredded cooked chicken (about 2 lbs)
1 1/4 cups shredded cheddar
1 4 oz can diced green chilies
10 tortillas-6 inch corn tortillas, the flour ones got kind of soggy!
2 medium green onions, thinly sliced-or if you're like us and love olives, diced olives are great on top!

Preheat oven to 350 degrees. In a medium bowl, combine soup and enchilada sauce. Spread 1 cup of the mixture in a 9 by 13 inch baking dish.  In a large bowl, combine 1 cup of remaining soup mixture, chicken and 1 cup cheese. Place 1/4 cup chicken mixture in each tortilla, roll up and place in baking dish.  Pour remaining soup mixture over enchiladas and sprinkle with remaining cheese and green onions (we did diced black olives instead!) Bake for 30 minutes or until cheese is melted.

Cooking the Chicken
Trying to cook chicken to shred has always been a pain for me!   I think the easiest way is to throw it in the crock pot and let it get nice and juicy cooked while I'm at work!  You can throw it in thawed, or frozen!
Place chicken breasts in your crock pot, season with a pinch of salt and pepper and 2 tsp garlic powder. Pour 1/2 cup water or chicken broth over.  Cook on low for 6 hours, or until chicken shreds easily with a fork.

Healthy Mac N Cheese

You read right. I said healthy. This recipe takes a bit of work, but it turned out so yummy!!! Who doesn't love Mac n Cheese? Plus you get to sneak some vegetables in there! Win, win!

I wish I was a better food photographer, because this picture does not do it justice!

2 cups uncooked elbow macaroni
1tablespoon butter
1 small yellow onion--unless you LOVE onions, I would recommend using half of a small onion!!!
1 small butternut squash (4-5 cups cubed)
5 cups chicken broth
3/4 cup milk
1 teaspoon salt
2/3 cup shredded cheese
Salt and pepper to taste

1. Cook the macaroni according to package directions, drain and set aside.  Heat the butter in a large skillet over medium/low heat.  Cut the onion in to thin rings--again, it's such a strong flavor you don't need a ton!!--add to the butter in the pan, heat on low until fragrant and golden, about 20 minutes.

2. Remove the skin and seeds from the squash. Cut into small cubes. Bring the broth to a boil and add the squash.  Cook for 5-7 minutes or until fork tender. Drain, reserving 1/2 cup broth, and transfer squash to the blender.  Add the onions, milk, salt and reserved broth. Puree until completely smooth.
I had no idea butternut squash was so complicated (jack-o-lanterns anyone??) So I googled it and found this awesome how to! Good luck!
3. Poor the pureed sauce over the noodles and add the shredded cheese. Stir to melt the cheese, and water or milk to adjust the consistency as needed!  Salt and pepper to taste!

The weather sure has been interesting this week!  One day we've got sun and the next is snow.  Saturday was a nice day, so I put on this fabulous hippie-chic tunic! I saw this shirt while I was shopping with my bestie Hilary down at Farmington Station.  This shirt jumped out at me! I decided to embrace my inner flower child :) LOVE THIS SHIRT!
