Mini Chocolate Chip Cookies

Have you ever had those delicious mini cookies from Mrs. Fields??  When I worked at the mall, I got a discount at Mrs. Fields.  Dangerous.  Which meant I ate about a million (small exaggeration) of those yummy mini cookies during the time I worked at Forever Young Shoes.  Mini chocolate chip cookies just help you cope with a busy, stressful day. Am I right!?  I found this recipe for mini chocolate chip cookies and decided to try it out!  They turned out great!  Plus they are so cute and tiny!  Which means you can eat more of them, because they're small!

This recipe makes a TON of mini cookies, perfect for a holiday party, or neighbor gifts!  You can also freeze the dough and make it later :) enjoy!

Mini Chocolate Chip Cookies

1 stick softened butter
1/2 cup brown sugar
1/4 cup white sugar
1 egg
1 teaspoon vanilla
1/3 cup all-purpose flour
1 cup cake flour--can be found at Target :)
1/4 teaspoon salt
1/2 teaspoon baking soda
mini chocolate chips

Mix together the flours, salt and baking soda.  In a separate bowl, mix together the butter and sugars.  Add the egg and the vanilla, mix until combined.  Slowly mix in the dry ingredients.  Stir in the mini chocolate chips.
Refrigerate the dough until firm.  
Scoop dough by 1/2 teaspoons onto a greased cookie sheet.  Bake at 350 for 5-8 minutes. (I liked mine at 5 minutes so they are nice and chewy!)
